This morning was apple breakfast day and living in the state of Washington that is so rich with such a bounty of different apples, how can one not invite these delicious beauties to breakfast?
We started by making a very delicate apple pancake syrup using sugar-free apple juice, some cornstarch for thickener and lots of spices such as cinnamon, nutmeg and apple pie spice.
As the oldest was patiently stirring this up and drooling about how hungry she was and how delicious this smelled, I made up pancake batter, set out the plates and eating utensils and then opened the Comfort Food diet Cookbook and set out making the apple sausage they have there.
All of our breakfast was eaten and I loved the comment the oldest made:
'the doctor stays away on apple pancake day!'
