The Best Creamed Corn Recipe Ever

The grand kids and I love looking through cook books and finding good looking food recipes to try and this time they picked a most delicious recipe for making your own creamed corn.

I personally am not a fan of canned creamed corn, it is just not very appetizing to me no matter how much butter or sugar you put into it, but this recipe while probably high in calories, is very tasty.

Ingredients:
4 slices bacon (crisp cooked & crumbled)
1 bag frozen corn
1/2 onion finely chopped
1/4 cup chicken broth
1 cup heavy cream
Pepper to taste

Fry the bacon and remove from pan. Chop onion and add to drippings (I pour most of the drippings out and saved enough to cook onion in) and cook until clear. Add corn to onions and cook for 4 minutes. Add bacon, chicken broth, heavy cream and pepper and cook another 7-10 minutes until done.

My grandchildren thought it was the best recipe ever and we had exactly 12 kernels left when dinner was over. It really was colorful since I used red onion and not to heavy in spite of the cream. Matter of fact, I used a slotted spoon to dish it out so the cream would drain back into the pan.
